1 cup unsalted butter cold

1 cup + 2 tbsp semi-sweet chocolate chips

1 cup all-purpose flour

3 tablespoon dark cocoa powder

2 tablespoon espresso coffee

½ teaspoon salt

 medjool dates pitted

1/2 cup (strong) cooled brewed espresso or cold brew

1 cup  raw almonds

1/4  cup unsweetened cocoa powder

 tablespoon chia seeds

Pinch of salt

  1. In a bowl, soak dates in brewed coffee for 15 minutes. Save the brewed coffee; don’t discard it.
  2. Transfer soaked dates to a food processor. Pulse for 2 minutes, adding 1 tablespoon of brewed coffee until dates turn into a thick caramel-like paste.
  3. Add remaining ingredients – almonds, cocoa powder, chia seeds, and sea salt – to the food processor. Pulse until a dough-like mixture forms. For a crunchier texture, avoid over-blending.
  4. Shape the mixture into 1-inch bites by hand.
