Growing up, baking with my Finnish grandma was a cherished bonding activity, and it’s where I developed a love for simple yet delicious desserts. So, inspired by those moments, I’ve decided to share some easy and delightful coffee-infused dessert recipes with you today. Espresso Chocolate Brownies

1 cup unsalted butter cold

1 cup + 2 tbsp semi-sweet chocolate chips

1 cup all-purpose flour

3 tablespoon dark cocoa powder

2 tablespoon espresso coffee

½ teaspoon salt

1 ¼ cups cocout granulated sugar

3 large eggs

½ tablespoon vanilla extract

  1. Preheat your oven to 350 F/180 C. Line a square 8×8 baking pan with parchment paper – a crucial step for baking success!
  2. In a stainless steel pan, let the butter brown over medium heat for 10-12 minutes. Watch as it transforms, foams, pops, and crackles – it’s a delightful part of the process. When brown bits appear at the bottom and that nutty aroma fills the air, transfer it all into a separate bowl.
    • Ingredients: 1 cup unsalted butter
  3. Add the chocolate chips to the bowl of browned butter and stir until they melt into a luscious blend. Set this heavenly mixture aside.
    • Ingredients: 1 cup + 2 tablespoons semi-sweet chocolate chips
  4. In another bowl, whisk together the flour, cocoa powder, espresso, and salt. Set this dry mix aside for now.

1/2 cup milk

1/4 cup espresso or strong coffee, cooled

1/4 cup coconut sugar

  1. Whip heavy cream until it forms stiff peaks.
  2. In another bowl, mix together milk, cooled coffee, powdered sugar, and melted chocolate.
  3. Carefully fold the whipped cream into the coffee-chocolate mixture.
  4. Portion the mousse into serving glasses or bowls and refrigerate for a minimum of two hours, allowing it to set.

No-Bake Chocolate Coffee Protein Balls

 medjool dates pitted

1/2 cup (strong) cooled brewed espresso or cold brew

1 cup  raw almonds

1/4  cup unsweetened cocoa powder

 tablespoon chia seeds

Pinch of salt

No Baking Required – Here’s How

  1. In a bowl, soak dates in brewed coffee for 15 minutes. Save the brewed coffee; don’t discard it.
  2. Transfer soaked dates to a food processor. Pulse for 2 minutes, adding 1 tablespoon of brewed coffee until dates turn into a thick caramel-like paste.
  3. Add remaining ingredients – almonds, cocoa powder, chia seeds, and sea salt – to the food processor. Pulse until a dough-like mixture forms. For a crunchier texture, avoid over-blending.
  4. Shape the mixture into 1-inch bites by hand.
  5. Refrigerate in an airtight container for up to 1 week or store in an airtight resealable freezer bag in the freezer for up to 3 months. Enjoy!
